Nose - Honey and caramel. Light oak and fruit come through.
Palate - Dark fruits from shiraz barrel mingle well with brown sugar and vanilla from the bourbon barrel. Pears and tropical fruits on second sip, just seems to keep getting deeper & richer the more it sits on the palate.
Finish - Very pleasant long finish with light spice and sweet; a bit of earth so characteristic of the Barossa wine country of its origin.
Complex, yet well integrated & balanced. Easy to taste and enjoy, deceivingly smooth at 52%!

Color: Deep auburn, glimmers of new-penny copper.
Nose: Toasted, buttered, multi-grain bread with apricot jam and hints of lemon zest.
Palate: Assertive flavors excite the palate with a broad array ranging from sweet caramel to spice a rye to deep rich malts. Allspice, subtle fruit, distinctive rye & fresh ground black pepper intermingle with rich bourbon-caramel, complementing a surprisingly creamy mouthfeel.
Incredibly complex, well-integrated & balanced. Belies its 55.95% ABV!
Finish: Lingering, evolving & warm, accentuating the toasted grain and stone-fruit from the nose. Caramel takes center stage as the spice gives way.

Truly a one of kind whiskey, fun and interesting to taste neat, this finished rye makes what possibly is the very best Old Fashion EVER!
Normally a two-year old rye aged in the warm and humid climate of Virginia, is traditionally a rich, full-flavored and wonderfully spicey American rye. The creative folks at Catoctin Creek took two hand selected fully mature rye barrels (30 gallons each) and filled a barrel from Copper & Kings that previously aged Orange Curacao Liqueur. We completed the aging in the orange Curacao barrel at Yahara Bay Distillers, our bottlers and processing partners in Madison.
The dark reddish amber is a precursor to the deep, rich flavor to come
Palate - honeyed sweetness and an unprecedented amount of fruit very rarely seen in such a spice forward rye. Just a touch of mature oak and earthiness normally only found in much older whiskies.
Incredibly well mellowed by the second maturation imparting a strong orange citrus note that fades to the rye's unmistakable spice then followed by an ever evolving and surpri-singly long finish where honey resurfaces under the citrus.

Softest of the three. Subtle pears/fruits and candy. The flavor and body of “Balcones”, gently oaked. Light caramel on the finish and the wood pleasantly lingers. Warm but doesn’t feel like 65.7% ABV.
Mild fruits, banana and very “buttery”. Sweeter with light cotton candy. Finishes with baked fruits on a toasted crust. Way smoother than it should be at 64.6%.
Incredibly floral and aromatic. All the spice! Tangy citrus and orange, lots of oak – great combination. Feel the proof at 65.9% more than the others, but oh it’s a good burn. A few drops of water bring the caramel to the surface. Wait for it…

NOSE: ripe cherries, old oak, chocolate, dark molasses, the more it breathes, the more the chocolate and fruits come out..
PALATE: baked cherries and plums, molasses and dark cocoa. raisins in the middle palate
FINISH: mature oak, cocoa, burnt fruits with less sweet. slight pepper. A bit dry, but really lingers. Water brings out a milk chocolate and sweet fruits. Just does not feel like 60% ABV

NOSE: sweet butter, maple - certainly from the fresh bourbon barrel finish, corn flakes, touch of fresh hay
PALATE: caramel, raw honey, soft oak, burnt molasses, a light citrus sweetness, Juicy Fruit Gum
FINISH: more molasses, very slight pepper on the end of a lingering finish. gentle burn, would never know is 54.5% ABV
